“Lo Speziale” is a new creation by Levoni: a one-of-a-kind salami thanks to its aromas and flavours stemming from a recipe enriched with Wide Fennel and Meadow Cumin – two spices which are perfect for extolling the flavour of pork meat, fully respecting the most ancient Italian pork butchery traditions.
Organoleptic
properties
Lo Speziale is a salami boasting a perfect sensory balance with round notes and a unique freshness. It is very fine grained, and its meat is seasoned and firm.
Lo Speziale is to be cut by hand using a knife in its 300 g size and sliced thinly using the slicer in the 3 kg size. Both must be deprived of their outer casing before being sliced.
Pairing and Wines
Lo Speziale expresses its full character in the most traditional way: on top of a slice of homemade bread, even better if baked in wood-fired oven. To be tasted laid down on a thin layer of ricotta cheese with carpaccio of raw fennels or special types of bread from Alto Adige with rye flour, cumin or poppy seeds.
With this spiced salami boasting a remarkable character, the pairing with a mellow, slightly bitter craft beer is a must. For those who cannot give up a good glass of red, the winning pairing refers to Alto Adige. Choose a Pinot Noir with notes of red and black fruits, cherry and plum, aromatic in the mouth, with soft tannins, a structured and intriguing wine.
