The slice is rosy red, with white or pinkish-white fat, the covering fat is white and firm. The aroma is delicate and can become more persistent if the product is very matured. The taste is well balanced between the sweet note and the typical fragrances of matured meat, with the result of a very round, especially pleasant gustatory sensation.

Instead, for those who cannot renounce the cheeses the prosciutto is excellent both with robiola and with spicy provolone (not too hot): the maturation will marry perfectly with its softness.
