History and
interesting facts
The porchetta is the roast of a whole boneless pig flavoured with fine herbs. In order to obtain a product that can be sliced more easily, Levoni proposes a version consisting of two loins wrapped in a lean pancetta with rind, flavoured with sea salt and wild fennel. Cooking is slow in a steam oven.
Organoleptic
properties
It is a roast characterised by a skilful blend of fine herbs, compact, pinkish, surrounded by very lean pancetta, streaked with alternating fatty and lean parts, with a beautiful browned rind. Tasty and lingering aroma. The taste is an explosion of flavour, softness and sweetness.
It is cut into thin slices with a slicer after removing the rind. Alternatively a thick slice with a knife to be heated in non-stick, microwave or quickly passed on the barbecue.
Pairing and Wines
It pairs well with mustard, mayonnaise, olive patè, sweet-and-sour cucumbers, mixed pickled vegetables, fresh or steamed vegetables.
Among the white wines we recommend Lazio TGI Malvasia: the grapes give a wine with a pronounced aroma, with a strong scent of musk. The taste is full, soft, fresh and harmonious, with a pleasant bitter almond finish.
