Unmistakably sweet and seasoned. Elegant, majestic curing cellar scents followed by a soft, more restrained consistency in the salami’s finer aspects.

History and
interesting facts

Its name derives from the pig's casing in which the minced meat is stuffed. Levoni is one of the few to use Italian casings for this salame, with a particular pear shape, common in Emilia. It is the natural hog bung casing that characterises the aroma and flavour of the paste keeping it soft even in the face of a long maturation.

Natural and handmade appearance, natural hog bung casing, hand tied, medium mincing. Slice of intense red color and pearly white fat. Typical aroma. Upon tasting its texture, sweet flavour, notes of matured meat and perfect balance between the fat and lean part are remarkable.

Cut into 3-4 mm slices with a knife, strictly slantwise, thus obtaining an elongated, oval slice. Serve slices on a cutting board with the knife.

Pairing and Wines

It is a classic paired with culatello, coppa and prosciutto di Parma. With Parmigiano Reggiano cheese, with fresh summer fruit such as melon or figs that accentuate its sweetness, with the mixed pickled vegetables and homemade bread. Excellent also with courgette carpaccio, lemon juice, extra virgin olive oil and almonds.

We propose the Cerasuolo d'Abruzzo CDO, a charming rosé of gentle freshness boasting a delicately vinous, fruity bouquet. A perfect marriage thanks to its dry, harmonious, delicate and non-invasive flavour.
