On the bone hams are particularly good warm and knife-cut to reveal all their aroma
and succulence. Hams with the shank lend themselves to cutting with a meat slicer,
though not too finely, for a practical yet equally satisfying result.
Sweet and persuasive, they combine harmoniously with delicate vegetable side dishes,
exalted by a red wine, such as a Lagrein from Italy’s South Tyrol region, with its hints
of berries, sweet spices and undergrowth.
