MATURED SAUSAGE OF EMILIA ROMAGNA LEVONI
This salami originates from an exclusive recipe by Levoni, and it boasts a small diameter and its typical “U” shape. Its slice has a soft texture and the colour of marc from which it inherits olfactory aromas well paired with the ground pepper and the delicacy of the meat minced not too finely. Stuffed inside a natural casing, it requires an averagely thick slice cut slantwise.
The characteristic of this dough is its crunchiness given by a long leavening (Mother Dough and natural yeast) and the high moisture content of the dough. A pizza that will turn out to be also very easy to digest.
