Collio Doc Ribolla gialla

The dry version of this wine is slightly citrus, grease-cutting and redolent of persuasive perfumes of acacia, with a notable acid vein as finale.

Makes a good pairing with Mild cooked skin-on Pancetta.
Made up of three kinds of Pancetta superimposed: the outer ones have their rind, while the one in the middle is without any and is leaner. This product, steam cooked, is very tender with a delicate taste.
