Lean, savoury, simply dressed with salt and pepper, the meat is baked dry for over 8 hours. The result is a roast beef with a golden surface and pink interior, whose slices, tender and tasty, are ideal hot or cold, either as they are or with some fruity extra virgin olive oil. Gluten, lactose and milk proteins free.

The recipe for this salami was created by Levoni in the 50s, specifically for Sicily. Since then, Paisanella has been adopted by the Sicilians as a traditional salami and over the years there have been several attempts to imitate it. It is a large-sized salami, with a coarse knife-cut grain, a mild and delicate flavour and a tender texture.
It is stuffed into natural casing and tied by hand with strings, only from pigs born and bred in Italy.
It does not contain gluten and lactose.
