Usually coming from a blend of Schiava and Lagrein grapes, this wine has a sophisticated, spicy, fruity perfume; to the taste pleasantly tannic, with good structure and persistence.
It makes an interesting pairing with Castelspeck.
CastelSpeck is Levoni’s Speck, obtained from particularly lean pork legs, trimmed, salted and flavoured with garlic, pepper, juniper berries, nutmeg and other spices and aromatic herbs. Delicately smoked in a natural way, its taste is aromatic.
Matches also with Carne Salada, a typical product of the Trentino region, low in fat and very soft. It
is made with the best beef meat, flavoured with salt and spices for at least 20 days. The taste is typical and aromatic.
