Sangiovese di Romagna Doc

When young, it is intense with fleshy fruit, cherries and notes of black pepper, a circular reply in its taste and good persistence.

It makes an interesting pairing with Defatted Pancetta Coppata, Pancetta with the fat trimmed off, wrapped around a piece of Coppa hand-tied, and long matured. The slice is bright red. The taste is somewhat savoury but delicate.
