Tazzelenghe in Friuli dialect is tàce-lenghe i.e. a ‘tongue-cutter’ because of its tannin. We use it after light maturation and end up tasting a wine that expresses texture and notable grease-cutting qualities while leaving a taste in the mouth that is pleasant and abounding in acidity, persistent and personal.
This wine makes a good pairing with Pancetta Praga. This is a lean Pancetta with rind, dry-salted and smoked using a natural method. The taste is delicate and appetizing.
