The Napoli salami takes inspiration from the ancient Neapolitan pork-butcher’s art, that regards a light smoking process, exclusively natural, and a delicate use of spices. It has thick consistency, bright red colour and a large grain. Put into natural casing, it lets perceive smells of smoked meats, anticipating the sweet taste that resembles the elder tree, and the gentle, lightly spicy and persistent tones. Tradition wants it cut out in slices not too thin.
The combination is excellent with the “pane cafone”, of Neapolitan origin, naturally leavened, recognisable for its scented and soft crumb, and the dark crispy crust.
