The Finocchiona, born in Florence during the Middle Ages, is the king of the Tuscan salami. Put into natural casing, it appears soft and with a medium large grain mixture, in which low-fat and fat sections are well blended. The intense aroma of the fennel prevails on the light scents of garlic and pepper, that are almost indiscernible. The gustatory balance is surprising, because the freshness of the fennel couples with the elegant opulence of the meats.
Sliced thin, it reveals all its distinctive pleasantness in combination with the Tuscan “pane sciapo”, the classic one, salt free and with thick and robust slices.
