Gentile Salami & Piadina Romagnola

It is a very precious salami, largely appreciated for its sweetness and fragrance. Put into natural “gentle” casing, it shows a thick consistency with medium-small grain. The scent recalls the fresh steak tartare, with delicate inclusions of chestnut underbrush perfume. The taste offers sensations of softness, sapidity and extremely light flavour of spices.
The thin slice enlightens the refinement and fragrance, although the tradition would prefer it a little thicker and oval. Excellent with the “piadina romagnola”, un unleavened bread, upgraded from a peasant food into a symbol of the Romagna.
