- 4 slices of horse meat
- 100 g of Ham steak Alta Qualità Medaglia d’Oro Levoni
- 100 g of caciocavallo podolico of the Gargano
- 4 sage leaves
- Terre di Bari Dop extra virgin olive oil
- dried cardoncelli mushrooms
- black pepper and salt
Take the horse meat slices and lay over each of them a layer of ham steak and Ciaciocavallo cheese, distributing the ingredients equally.
Roll up the slices and secure them with a tooth stick. Lay over each wrap a leaf of sage and secure it with another tooth stick.
Arrange all wraps on an oiled pan, spread with the dried cardoncelli mushrooms and cook over law flame making sure to turn the wraps on both sides for letting them roast on their entire surface.
Add some drops of hot water and cover the pan with a lid.
When the cooking is over, add some pepper, arrange the wraps on the dishes along with their cooking sauce, decorate with some sage leaves and diced ham steak.
