Ham and cheese windmills

Ingredients
  • 500 g flour
  • 150 g cooked ham
  • 250 g of water at room temperature
  • 150 g mozzarella
  • 25 g of yeast
  • grated Parmesan cheese
  • 10 g sugar
  • oregano
  • 10 g salt
  • 4 tablespoons extra virgin olive oil

First of all prepare all the ingredients with your helper on the working table, then pour the flour into a bowl, form a large crater, like a volcano. Now put on the external side of the volcano the salt and in its centre the sugar, crumbled yeast and a little water: with one hand lightly swat the yeast so that it melts, then add also the remaining water and the oil. With one hand hold tight the bowl and with the other start to collect the flour and mix it with water. At the beginning you can use a fork to do this. Once all the ingredients begin to melt together, pour the dough on a lightly floured board and begin to knead it with both hands. For this operation it is essential to get some help. When the dough is beautifully smooth, shape it into a ball and put it back in the bowl, cover it with a cloth or foil and leave it to rise for about 1 hour in a place sheltered from cold air drafts: the yeast is “chilly” and if it lacks a hot niche it does not rise! While the dough rises, you prepare the stuffing: cut the mozzarella cheese into thin slices and then into strips; cut the ham in the same manner. After this, resume the dough and spread it out in a big pastry about 1 cm high: spread with ham, mozzarella cheese, a pinch of oregano and a generous handful of Parmesan. Then with a lot of patience roll up the dough from its long side to form a sort of salami. Ask your helper to divide it into 8 parts and then place them in a baking tray with the cut side upward and pinch them well to avoid the filling to come out while cooking. Remember not to place them too close because they still have to grow a bit more. Cover the windmills with a kitchen towel and let them rest for 30 minutes, always in a warm place. Finally ask your helper to drizzle them lightly with a little olive oil and bake them in the oven at 200° degrees for 20 minutes.
