Mini omelettes with mortadella

  • 2 eggs
  • 1.5 dl milk
  • 20 g flour
  • 40 g grated Parmesan
  • 1 pinch of salt

First ask your assistant to turn on the oven to 180° and grease well the moulds. In the meantime pour in a bowl the grana cheese, a good pinch of salt and flour, then merge the eggs one by one, stirring with the whisk before adding the next one. Finally pour the milk a little bit at a time and mix with whisk. Pour the egg mixture into 8 baking cups, put some mortadella in each of them and then peas in 4 of them and carrots in the remaining 4. Ask your helper to pass the mini omelettes in the oven for 30 minutes. Once ready ask him to take them out from the oven and let them cool completely before serving.
