Fesa, i.e. rump, is one of beef's most prized cuts; it is dry seasoned with a mix of salt and pepper, it is put in a net and cooked for 8-10 hours in dry ovens. Meat looks nicely golden on the surface and slightly raw inside. Slices are tender.
