It is produced following the ancient Mantua recipe, where top quality ingredients, such as lean pork, throat and pigskin are used. Pork is minced to a medium grain size, mixed and flavoured with salt and pepper. This mix is then filled in natural pork casings and left to dry for one or two days. Cotechino Mantova scorzone differs from the "classical" cotechino Mantova in that its mix is filled in a "scorzone" beef casing. It has the traditional kidney shape. Both products have a very tender texture and delicate taste. For consumption, they require cooking for approximately 3/4 hours.
