Cappellotto, which is also known as Cappello del Prete, is a triangular shaped product that, as the Italian name denotes, looks like the hat that priests used to wear in the 18th century. It is a kind of Zampone, traditionally linked to the Modena area and filled, unlike zampone, in the skin from pigs’ throats, which have been previously defatted and sewn into the traditional shape. The raw material for this product is pork from pigs bred in Italy.
For consumption, simply plunge the bag in a pot full of water, bring water to boiling and let boil for 30 minutes. Its taste is aromatic and appetising. When cutting it, slices look rosy red and compact.
