This breed is raised only in the wild for a distinctive, high grade of meat which is very difficult to work with but, once mastered, produces a unique flavour. Those fortunate few who have tasted salame or prosciutto from Paolo Parisi's own Cinta Senese swear it is amongst the finest in the world. |
