Coppa is a dry-cured deli meat product typical of northern Italy, which is prepared using pork neck muscles. Levoni uses selected pork meat from pigs born and bred in Italy; the meat is then salted and massaged with great care to favour the absorption of salt, wine, garlic and of the other spices. The minimum maturation period ranges from two to four months according to the piece sizes and this is necessary to let its characteristic aroma and taste slowly develop. The natural casing used determines coppa’s even texture. When cutting the product, the resulting slice is compact, nicely dark red with rosy white parts.
