Mec Carni is one of the most modern abattoirs, renowned world-wide, specialising in the slaughter and
cutting of pork meat. The company was set up in 1976 to supply the cured meats processing industry and today the company slaughters around 10,000 pigs a week, over 65,000 sq. m. floor space. Currently, over 185 skilled and qualified operators use state-of-the-art equipment to offer the highest levels of quality and service to the customer.
Only prime pigs of certified and traceable origin are selected for the Mec Carni abattoir.

Animal Welfare:

HACCP and SSOP:
The auto-control system adopted by the company is based on the principles of HACCP (Hazard Analysis Critical Control Points). This internationally-recognised method of operation relates to the prevention and minimization of risk in the food and beverage preparation processes.
Mec Carni applies the SSOP (Sanification Standard Operating Procedures) monitoring system to guarantee maximum hygiene in its operations as well as in the use of equipment, work surfaces and the working environ-ment. Therefore, by using this system, the abattoir meets all the requirements for export to the USA.

Quality Control:
As well as applying the legally-required controls, Mec Carni carries out additional checks and inspections on the meats using a management and internal quality control system. Moreover, the company also performs spe-cific product analyses at the request of the customer. |

FOM Assessment:
On the slaughter line, a specific measurement is carried out on the carcass using the FOM (Fat-O-Meater) in-strument which measures the fat layer and calculates the percentage of fat compared to lean meat. The result is used for classifying the carcass under the EUROP system (Ministerial Decree of 11 July 2002, which came into force in Italy on 1/01/06).
This classification not only offers more information to the customer but also offers transparency on the quality of the carcass and its fat content. |

Certification of the Supply Chain:
The company has obtained product certification under Regulation UNI 10939/01 (traceability system for the agri-food supply chain). This system allows an effective control of the entire supply chain thus creating an identity card for the product. In fact, all steps are recorded in detail - from the fattening of the piglet, to the delivery of the product to the end customer - thereby guaranteeing the traceability of the meats. |

Research and Development
The Mec Carni abattoir is developing, in collaboration with the Universities of Milan and Modena and with the SSICA research centre for food preserves in Parma, an intense research and development programme aimed at identifying product high quality standards through pig farm genetic improvement and management.

Pork
Thanks to the new breeding methods and a controlled feeding, the pork of today’s pigs is fully in line with modern nutritional requirements. In fact, the quantity of fat present in the meat has diminished and its composition has changed with a lower amount of saturated fatty acids and a higher percentage of unsaturated ones. The cholesterol level present in pork is now comparable to that of white meats. Furthermore, pork is rich in noble proteins, iron and zinc, it contains vitamins B1, B2 and B12 which protect the nervous system and favour tissue renewal. |
